For graduates of Advanced Raw Techniques IV, this course focuses on applying high-level raw culinary training to creative and entrepreneurial endeavors within the plant-based market. In this course, we train students in the raw food technique and service at the highest level, following the philosophy of Matthew Kenney Culinary.
This course is available to only 10 students each year, who work under the supervision of the program Instructor, Matthew Kenney Cuisine’s Culinary Director, Scott Winegard, Matthew Kenney and other key members of the Matthew Kenney Culinary team.
This PRO course is designed for the ambitious, curious, creative student wishing to explore plant-based cuisine at its most inventive and refined level, and for those wishing to participate in an open-forum environment that brings together the finest raw cuisine with modernist sensibilities. Weekly projects, visits from culinary artisans and producers, and field trips will be included as a source of culinary inspiration. Weekend foraging expeditions will be available on selective Saturdays.
